Stuffed Pasta Shells

Great comfort food for that cold night.  Also try browning some beef or sausage and add it to the sauce.

Ingredients

  • 1 Box jumbo pasta shells (12oz)
  • 4 Cups Ricotta Cheese (2 lbs)
  • 2 Cups shredded mozzarella cheese
  • 3/4 Cup Fresh Graded Parmesan Cheese
  • 3 Large Eggs
  • 1/2 Tsp Salt
  • 3/4 Tsp Oregano
  • 1/4 Tsp Fresh Pepper
  • 3/4 Tsp. Garlic Powder
  • 3/4 Tsp. Italian Seasoning
  • 3 1/2 Cups Red Sauce of choice (32 oz)

Method

Step 1

Cook jumbo shells according to package directions; drain. Cool in a single layer on wax paper or aluminum foil to keep shells from sticking together. Combine cheeses, eggs, parsley, oregano,Italian Seasoning, garlic Powder, salt, and pepper. Fill each shell with about 2 tablespoons of cheese mixture.

Step 2

Spread a thin layer of sauce on bottom of 13 x 9 inch baking pan. Place shells, open side down, in a single layer in the pan; cover with remaining sauce. Sprinkle with additional Parmesan cheese, if desired. Cover with aluminum foil; bake at 350 degrees about 35 minutes or until hot and bubbly. Fills about 36 shells
